Don’t cry, my love
It really is quite uncomfortable to peel and cut onions.
You already know there are many different kinds of onions. Some make you cry more than others. But this has to end.
Enough of the abuse inflicted by these inconsiderate little balls.
Chef magic at work
The first trick you can try is to put them in the fridge for a while before cutting them. The cold reduces the effect that the released sulfur will have on your eyes.
Make sure your knife is really sharp. A sharp knife is a safe knife.
But if you have to cut them RIGHT NOW! and you do not have time to chill them enough, you can sprinkle the board with… a little wine vinegar.
You will love how your eyes stop stinging. Chef magic.
As a side, be sure to wash your knife thoroughly after cutting onions; right up there with garlic, they will spread their scent at any opportunity.
